This is NOT low carb friendly, but I think I could use chickpeas instead of pretzels.

Brad made the most tastiest holiday treat ever yesterday. They are called "seasoned pretzels." You take the pretzel bites, and toss them in a mixture of I think vegetable oil, ranch dip mix (hidden valley is perfect), and other seasonings like lemon & pepper, garlic powder, and dill weed. Get them all nice and covered in this syrup-y mix, and then bake them for about 12 minutes, stirring them every 4 mins or so.

They are amazingly tasty. I love them. I'm definitely serving them on Christmas.

As I said though, I think the same seasonings would be great on roasted chickpeas, so I will definitely try that sometime.

I just stumbled across a recipe that I am DEFINITELY going to try tonight:

Roasted Chickpeas

Just rinse and drain canned chickpeas, then spread out in a shallow baking dish... drizzle with a little olive oil and some spices of your choice (salt, pepper) -- or you can mix this all in a bowl, then spread in the pan and bake at 450 for 15-20 minutes. Stir a few times until you see them golden brown.

Either take them out of the oven, and let them cool (eat at room temperature) or you may opt to leave them in the oven overnight, which will crisp them up further.
